bayou tiki

For Matt's birthday a few weeks ago, I got him a "tiki starter kit," which included two vintage tiki mugs, some bamboo drink skewers, and Smuggler's Cove, a tiki cocktail book. Matt wanted to try one of the cocktail recipes right away, but unfortunately there were a lot of unique ingredients and we didn't have any orgeat syrup or falernum lying around, so Matt improvised, and ended up creating this light, refreshing rum cocktail.

2oz rum

1oz peach syrup

1oz lime

5 chunks pineapple

mint


muddle pineapple in shaker. flash blend with rest of ingredients and 2 cups crushed ice. double strain into chilled coupe glass. garnish with mint.
